Purely Elizabeth is pushing beyond breakfast with its first true foray into snacking, launching Granola Bites as the fast-growing brand prepares to join Ferrero Group. 

The Move: Rolling out exclusively to Target this month, the chewy snack comes in four flavors and delivers 6 grams of fiber per serving from a blend of chicory root, cassava root, oat and apple fiber. The format gives Purely Elizabeth a way to extend its gravity in granola into more eating occasions, with broader distribution slated for January. 

The Bigger Picture: Granola Bites tap into several forces currently shaping the snack aisle, including demand for convenient, portable formats, growing interest in chewy textures and heightened consumer focus on fiber and digestive health. 

  • In company testing, 88% of consumers said they would eat the bites on the go, while 64% said they are trying to add more fiber into their diets.

  • The brand also sees a significant opportunity with Gen Z, as younger consumers embrace smaller, more frequent eating occasions.

The Scale: Purely Elizabeth generated more than $200 million in brand sales in 2025 after more than doubling in size over the past two years and is on track to surpass $300 million this year. 

What’s Next: The snacking expansion comes as Ferrero Group prepares to acquire the 17-year-old brand in a deal reportedly valued at $850 million. Stein will remain CEO, with Purely Elizabeth operating as a standalone brand. 

  • Ferrero sees the acquisition as a way to strengthen its position in better-for-you foods and breakfast while giving Purely Elizabeth access to greater operational, innovation and distribution capabilities.
