While these remain the buzziest building blocks for most modern emerging brands, they are also key to the revival of a pretty old and well-understood category: Dairy. Plant-based dairy rode its popularity wave in recent years, capturing plenty of consumers along the way who struggled with the digestive aspect of traditional milk. But lack of taste and nutrition parity with the real thing let the hype expire for some shoppers. But now, the 10,000-year old category (yup, that’s how long humans have been consuming cow’s milk) is experiencing a resurgence of some kind, returning to its roots by way of a dairy format typically only found among heritage cow breeds: A2/A2. Though the FTC dropped the case back in May, blaming the prior administration for a “nakedly political” prosecution (sounds familiar), a judge unsealed the original complaint last week in response to a request from a consumer advocacy group, giving us a first look at the case-that-wasn’t-to-be.
