A single, really dang good strawberry is pretty much credited with kicking off the farm-to-table movement in the U.S. Pioneer Alice Waters (a.k.a. the activist, chef and founder of legendary California restaurant Chez Panisse) once recounted how biting into a perfectly ripe wild strawberry during a trip to Paris changed her entire mindset about food. (More on that here if you’re curious)... But that was the 1970s. In today’s much-more-tech-forward world, the robots are running point on perfecting that perfect berry. Oishii, the Japanese vertical farming outfit, recently harvested a fresh $150 million in Series C cash to scale up its indoor “Smart Farms” while also expanding access to its bougie berries (ICYMI: their first carton launched with an SRP nearing $60). We caught up with the company’s chief commercial officer Rita Hudetz (formerly of PepsiCo) to understand how the company has repositioned with the consumer and retailers in mind.
